LONE WOLF CHEESE: Susan O’Dwyer has been making hard cheeses one wheel at a time for over ten years. Her cheeses are Farmstead Artisanal Cheeses which means she owns the cow (sweet natured Greta) which she milks by hand. Greta is a Jersey cow whose milk contains the health beneficial A2 protein. The name Lone Wolf is because Susan does it all herself.
